Cassadaga Job Corps Academy Food Service Manager Juma Nadi participated in the second annual “Job Corps’ Top Chefs: Creating Healthy and Nutritious Food Services” conference during the week of September 12 in Washington DC. The focus of the conference, which was sponsored by Sodexo inc. and the National Job Corps Association, was on how to create, share and serve healthier meals to the students the chefs serve as a way to improve health on Job Corps Centers. The highlight of the event was a discussion led by White House Assistant Chef and Senior Policy Advisor for Healthy Food Initiatives Sam Kass. Kass led the attendees on a guided tour of the White House food garden and explained how similar gardens can be grown at the chef’s center. The summit ended with a “Top Chef”-style competition, where participants teamed up to create healthy, flavorful meals in the Lounge 201 kitchen on Capitol Hill, using ingredients purchased from a local farmers market in DC.
